"Carlo and Giulia Puri Negri invited us to their beautiful house, full of love, knowledge, and pasta. Did you know there’s a real cowboy culture in the south of Tuscany? The picturesque region of Maremma is also home to the butteri, a legendary group of cowboys whose origins can be traced back to Etruscan times. The herds of Maremmana cattle live in the marshlands next to the sea. Due to the wild breeding of these animals, their meat is considered some of the best in Italy." – Wolfgang Stahr
